This pronunciation variation happens only when υ is part of a two-vowel combination (ευ / αυ / ηυ). It may also be pronounced as a V sound in the same combinations. You can learn more about these combinations and their pronunciation in the following video:

In that case, the text is correct. Ευχαριστώ is a verb and the object is σας. I guess there must have been an error in the recording script. You can disregard the comment about ευχαριστώ being a noun. Unfortunately, I can't change the audio. Apologies for the confusion.

The Lesson Notes say, “Efharistó, which is a verb, and the object Sas”. Yet the audio says, “Efharistó, which is a noun, and the subject Sas.”

Which is correct?
